What is Cachaca?
Cachaca (ka-SHAY-sa) a Brazilian liquor, is made from
distilled sugar cane juice. While most rums from the
Carribean are distilled from molasses, Cachaca is
distilled directly from the juice of the fresh sugar
cane. Before distillation, the juice ferments in a wood
or copper container from two to four weeks, and is then
boiled down multiple times to form a concentrate. More

drink, Capirinha (kie-purr-Reen-yah)
which has become internationally recognized and
